Beef fajitas

Ingredients: 
  • 1/3 cup (80ml) barbecue sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon chili powder
  • 500g beef fillet, sliced thinly
  • 1 small red capsicum (150g), seeded, sliced thinly
  • 1 small green capsicum (150g), seeded, sliced thinly
  • 1 small yellow capsicum (150g), seeded, sliced thinly
  • 8 large flour tortillas
  • ¾ cup (180g) sour cream
  • Avocado topping
  • 2 medium avocados
  • 1 tablespoon lime juice
  • 1 clove garlic, crushed
  • Tomato salsa
  • 2 medium tomatoes (380g, seeded chopped finely
  • 1 small red onion (100g), chopped finely
  • 1 tablespoon olive oil
  • 2 teaspoons finely chopped fresh coriander

Preparation: 

Preparation time 30 minutes (plus marinating time), cooking time 10 minutes.

 

1. Combine sauce and spices in medium bowl, add beef. Cover, refrigerate 3 hours or overnight.

2. Cook beef and capsicums on heated oiled barbecue uncovered, until beef is browned and capsicums are tender.

3. Meanwhile, wrap tortillas in foil, in parcels of four, and heat on barbecue. Remove tortillas from foil and divide beef mixture among them. Top with sour cream, avocado topping and tomato salsa, roll to enclose filling.   

 

Avocado topping: mash avocado coarsely in medium bowl with fork, mash in lime juice and garlic.

Tomato salsa: combine ingredients in small bowl.
