Herb- seasoned chicken with beer

Ingredients: 
  • 8 chicken drumsticks (1.2kg)
  • Plain flour
  • 2 teaspoons vegetable oil
  • 1 cup (250ml) beer
  • ½ cup (125ml) chicken stock
  • 1 tablespoon Worcestershire stock
  • 1 tablespoons cornflour
  • 2 teaspoons water
  • Herb seasoning
  • 2 bacon rashers (140g), chopped finely
  • ¾ cup (45g) stale breadcrumbs
  • 40g butter, melted
  • 1 tablespoon finely chopped  fresh oregano
  • 1 tablespoon finely chopped fresh chives
  • 2 teaspoons finely chopped fresh thyme
  • 1 teaspoon seasoned pepper

Preparation: 

Preparation time 25 minutes, cooking time 40 minutes.

1. Push herb seasoning under skin of drumstick, toss in flour. Shake away excess flour.

2. Heat oil in large saucepan, cook chicken in batches, until browned.

3. Return chicken to pan. add beer, stock, sauce, simmer covered about 20 minutes or until chicken is tender, stirring occasionally. Add blended cornflour and water, cook stirring until sauce boils and thickens.

4. Serve with pasta, id desired.

Herb seasoning: heat large saucepan, cook bacon, stirring until browned. Remove from heat, stir in remaining ingredients.
