Chocolate cookies

Ingredients: 
  • 125g butter, chopped
  • 1 teaspoon vanilla essence
  • 1 ¼ cups (250g) brown sugar
  • 1 egg
  • 1 cup (150g) plain flour
  • ¼ cup (35g) self-raising flour
  • 1 teaspoon bicarbonate soda
  • 1/3 cup (35g) cocoa powder
  • ½ cup (85g) raisins
  • ¾ cup (100g) macademia nuts, toasted, chopped coarsely
  • 1 cup (190g) dark choc bites ( or halve dark, dark white)

Presentation: 

Preparation time 10 minutes, cooking time 10 minutes.

1) Preheat oven to moderate. Line three oven trays with baking paper.


2) Beat butter, essence, sugar and egg in medium bowl with electric mixer until smooth. Stir in combined sifted flours, soda and cocoa, stir in raisins , nuts and chocolate pieces.


3) Drop rounded tablespoons of mixture onto prepared trays  about 4cm apart, press each with fork to flatten slightly. Bake in moderate oven 10 minutes. Stand 5 minutes, transfer cookies to wire rack to cool.


Makes 24, per cookie 10g fat, 784kj.


Serving suggestion: accompany with a glass of cold milk.
