1. Score fish three times on each side.
2. Fill cavity of fish with seasoning, wrap in lightly oiled foil.
3. Place fish on heated oiled barbecue or grill, cook covered about 1 hour or until cooked through.
Seasoning: melt butter in medium frying pan, cook onion and garlic until onion is soft. Add spices, cook, and stirring until fragrant. Combine onion mixture, rice, nuts, herbs and rind in large bowl.
