Fruit Collins

Fruit Collins - Brunch refreshener.

Ingredients: 
  • 1 cup ice cubes
  • 45ml ruby red grapefruit juice
  • 45ml fresh watermelon juice
  • 30ml  lime juice
  • 10ml sugar syrup *
  • 60ml gin
  • 60ml soda water

Preparation: 

For this recipe, you will need to blend about 10cm-chunk of watermelon, then pour it through a sieve to catch the seeds.

Place ice in glass, add juices and syrup one at a time, then gin. Stir, top with soda water, stir again.

Garnish thin slice of lime and two straws

*for sugar syrup combine 1 cup (220ml) sugar and 1 cup (250ml) water in small saucepan , stir over low heat until sugar dissolves. Bring to a boil, then reduce heat and simmer, uncovered, without stirring, 5 minutes, remove from heat, cool.
Store in an airtight container in the refrigerator for up to 2 months.
