Spatchcocks with prosciutto and herb butter

Ingredients: 
  • 50g butter, softened
  • 2 cloves garlic, crushed
  • 2 tablespoons finely chopped fresh flat-leaf parsley
  • 2 tablespoons finely chopped fresh basil
  • 4x500g spatchcocks
  • 12 springs fresh thyme
  • 4 slices prosciutto (60g)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
