Ingredients: 
  • 4kg turkey
  • 2 small oranges (360g), quartered
  • 6 fresh bay leaves
  • 2 sprigs fresh marjoram
  •  
  • Orange butter
  • 1/4 cup (60ml) dry white wine
  • 2 teaspoons finely grated orange rind
  • 100g butter, chopped
  • 1 clove garlic, crushed
  • 2 tablespoons brown sugar
  • 2 tablespoons orange juice

Turkey with lime and mustard

Ingredients: 
  • 8 turkey breast escalopes (550g)
  • 2 tablespoons olive oil
  • 2 teaspoons cracked black pepper
  • 1 tablespoon Dijon mustard
  • 1 teaspoon grated lime rind
  • 2 tablespoon lime juice
  • 2 limes, sliced thinly
