Pasta Caesar salad

Ingredients: 
  • 200g large pasta shells
  • 2 bacon rashers (140g), chopped finely
  • 1 medium cos lettuce, torn
  • 2 hard-boiled eggs, chopped coarsely
  • 2 small avocados (400g), chopped coarsely
  • ½ cup (40g) shaved parmesan
  • Caesar dressing
  • 1 egg
  • 2 cloves garlic, quartered
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 8 anchovy fillets, drained
  • ¾ cup (180ml) olive oil

Preparation: 

Preparation time 15 minutes, cooking time 15 minutes.

 

1) Cook pasta in large saucepan of boiling water, uncovered, until just tender, drain. Rinse under cold water, drain.

2) Meanwhile, cook bacon in small frying pan, stirring until browned and crisp, drain on absorbent paper.

3) Place pasta and bacon in large bowl with lettuce, hard-boiled egg and avocado, pour over half of the Caesar dressing , toss gently to combine. 

 
4) Divide salad among serving plates, drizzle with remaining dressing , sprinkle with cheese.

Caesar dressing: blend or process egg, garlic, juice, mustard and anchovies until smooth, with motor operating , gradually add oil, processing until dressing thickens.
