Spaghetti Bolognese

Ingredients: 
  • 1 tablespoon olive oil
  • 2 large brown onions (400g) chopped finely
  • 4 cloves garlic, crushed
  • 1.2kg minced beef
  • 2 large carrots (360g) grated coarsely
  • 1/3 cup (95g) tomato paste
  • 3 cups (750ml) beef stock
  • 2x810g cans crushed tomatoes
  • 1 tablespoon mixed dried herbs
  • 500g spaghetti
  • Grated parmesan

Preparation: 

Preparation time 15 minutes, cooking time 1 hour 40 minutes.

1)  Heat oil in large saucepan, cook onion and garlic, stirring until onion softens.

2) Add mince, cook, stirring until browned. Add carrot and tomato paste, cook stirring 5 minutes. Add stock, untrained tomato and herbs, bring to a boil. Reduce heat, simmer, covered 45 minutes, stirring occasionally. Uncover, simmer for about 45 minutes, or until thickened slightly.

3) About 10 minutes before sauce is ready, cook pasta in large saucepan of boiling water, uncovered, until just tender, drain.

Serve half the Bolognese with spaghetti, reserve remaining half of Bolognese for another use. Serve sprinkled with grated parmesan.
