Moroccan orange and radish salad

Ingredients: 
  • 6 large (1.8kg) seedless oranges
  • 4 large (200g) red radishes
  • ½ small (50g) red onion, sliced finely
  • 1 cup (180g) black olives, seeded.
  • Lemon dressing
  • 1 clove garlic, crushed
  • ½ teaspoon sweet paprika
  • ½ teaspoon ground cumin
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • ¼ tablespoon sugar
  • 2 tablespoons finely chopped fresh parsley
  • 1 teaspoon orange flour-water
  • ½ teaspoon ground cinnamon

Preparation: 

Preparation time 30 minutes

1. Peel oranges, removing white pith, slice thinly. Slice radishes thinly.

2. Overlap alternate slices of orange and radish around edge of serving plate, overlap remaining slices in centre. Top with onion and olives, drizzle with dressing.

Lemon dressing: combine all ingredients in screw-top jar, shake well.
