Prawn cocktail

Ingredients: 
  • 36 medium (900g) cooked prawns
  • 1 medium iceberg lettuce
  • Cocktail dressing
  • 2 egg yolks
  • 1 tablespoon white vinegar
  • 1 tablespoon Dijon mustard
  • 1 cup (250ml) olive oil
  • 1 teaspoon Tabasco sauce
  • 1 tablespoon Worcestershire sauce
  • ¼ cup (60ml) tomato sauce
  • 2 teaspoons lemon juice.

Preparation: 

Preparation time 45 minutes

 

1. Shell and devein prawns, leaving heads and tails intact.

2. Cut lettuce into 6 wedges.

3. Just before serving, divide prawns and lettuce among serving plates, drizzle with dressing.

Cocktail dressing: blend or process egg yolks, vinegar and mustard until smooth, with motor operating, add oil in thin stream, process until dressing thickens. Stir and sauces and juice.
