Zucchini with chermoula dressing

Ingredients: 
  • 8 medium zucchini (1kg)
  • Chermoula dressing
  • 1 small red onion (100g), chopped finely
  • 2 cloves garlic, crushed
  • ½ teaspoon hot paprika
  • 1 teaspoon sweet paprika
  • 1 teaspoon ground cumin
  • ½ cup (125ml) olive oil
  • 2 tablespoons lemon juice
  • 1 cup finely chopped fresh flat leaf parsley

Preparation: 

Preparation time 10 minutes, cooking time 10 minutes.

1. Cut zucchini in half lengthways.

2. Cook zucchini on heated oiled barbecue, uncovered until browned lightly both sides and just tender.

3. Serve drizzled with chermoula dressing.

Chermoula dressing: combine ingredients in screw-top jar, shake well.
