Chilli con carne

Ingredients: 
  • 1kg beef chuck steak
  • 2 tablespoons olive oil
  • 2 medium brown onions (300g), chopped finely
  • 3 cloves garlic, crushed
  • 3 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon chilli powder
  • 1 tablespoon finely chopped fresh oregano
  • 2 x 425g cans tomatoes
  • 1 cup (250ml) beef stock
  • 2 teaspoons brown sugar
  • 310g can red kidney beans, rinsed, drained

Preparation: 

Preparation time 25 minutes, cooking time 1 hour 30 minutes

1. Cut beef into 2cm pieces. Heat half of the oil in large saucepan, cook beef in bathes, until browned. Drain on absorbent paper.

2. Heat remaining oil in pan, cook onion, garlic, spices and oregano, stirring until onion is soft.

3. Add undrained crushed tomatoes, stock, sugar and beef, simmer covered about 1 hour or until beef is tender.

4. Stir beans into beef mixture, simmer 5 minutes or until heated through.
