    Vinification Details Destemming, light crushing, cold soak - skin contact, alcoholic fermentation at gradual increase temperatures, maintenance of wine “sur lie” for seven months with regular stirring. Ageing: Twelve months in Allie oak casks medium to light toast and twelve fifteen months in bottle
