Prepare Use FOR 2 PEOPLE Take 120 g of couscous and add a little olive oil. Add 160 g of boiling water and let it rest covered for 5-6 minutes. Separate the grains, by stirring with a fork. Serve the way you like. VEGETERIAN COUSCOUS For 4 people Ingredients: 500 g Casino Bio couscous, 2 carrots, ½ red curri squash or curcubita maxima squash, 2 courgette, chickpeas cooked in steamed water, 250 g prunes, 1 small celery, 2 onions, olive oil, vegetable broth, 1 coffee spoon of ras el hanout (Moroccan spice mix), 2 coffee spoons of fresh grated ginger, 1 cinnamon stick, 1 pinch of saffron, fresh coriander and parsley. Instructions: Prepare the vegetables (courgettes, carrots, squash, celery) by cutting them in pieces. Cut the onion in fine slices and brown it in little olive oil with the ras el hanout, the ginger and the prunes. Add the cinnamon stick, the carrots, the celery, and the vegetable broth. Salt. Cover and let them simmer for 10 minutes. Then, add the squash, the courgettes and the chickpeas along with the saffron and the parsley. Let them be cooked for 20 minutes. Prepare the Casino Bio couscous last minute: pour 500 g of couscous into a plate, cover it with boiling water and let in soak for 5 minutes. Then, separate the grains, by stirring with a fork. Serve the vegetables on top of a bed of grains on each plate
