Hot cross biscuits

Serves: 18-20 cookies
Ingredients
- 200 g soft unsalted butter
- 1 egg
- 150 g soft brown sugar
- 2 cups flour for all uses
- 1 tsp of mixed spice
- 1 tsp of cinnamon
- 1 tsp of ginger powder
- 1 tsp of vanilla extract
- 1/2 cup raisins
- 1 tsp of baking powder
- 1 tsp zest of 1 orange
For garnish:
- 100 g white chocolate
Cooking Instructions
- In a large bowl, beat the butter with the brown sugar well until they become a soft mixture.
- Add the egg, vanilla extract, sift the flour into the mixture, add the cinnamon, mixed spice, ginger and baking powder and mix gently or at low speed if using a hand mixer.
- Finally, add the orange zest and raisins to the mixture.
- Take a small amount of the mixture and form small balls (we can also use a scoop of ice cream).
- Place them in the pan leaving a small distance between them and press them lightly.
- Bake the cookies for 12 minutes until golden brown. It is important not to let them cook longer because they will not be fluffy.
- Once removed from the oven, leave the cookies to cool well.
- Melt the white chocolate in a baking pan and decorate the cookies, carefully forming a cross with a teaspoon or a pastry cone.
- Let the chocolate dry well before enjoying the cookies.
