Preparation time: 10 minutes

Cooking time: 12 minutes

Difficulty: 3/10

Serves: 18-20 cookies

Ingredients

  • 200 g soft unsalted butter
  • 1 egg
  • 150 g soft brown sugar
  • 2 cups flour for all uses
  • 1 tsp of mixed spice
  • 1 tsp of cinnamon
  • 1 tsp of ginger powder
  • 1 tsp of vanilla extract
  • 1/2 cup raisins
  • 1 tsp of baking powder
  • 1 tsp zest of 1 orange
For garnish:
  • 100 g white chocolate

Cooking Instructions

  1. In a large bowl, beat the butter with the brown sugar well until they become a soft mixture.

  2. Add the egg, vanilla extract, sift the flour into the mixture, add the cinnamon, mixed spice, ginger and baking powder and mix gently or at low speed if using a hand mixer.

  3. Finally, add the orange zest and raisins to the mixture.

  4. Take a small amount of the mixture and form small balls (we can also use a scoop of ice cream).

  5. Place them in the pan leaving a small distance between them and press them lightly.

  6. Bake the cookies for 12 minutes until golden brown. It is important not to let them cook longer because they will not be fluffy.

  7. Once removed from the oven, leave the cookies to cool well.

  8. Melt the white chocolate in a baking pan and decorate the cookies, carefully forming a cross with a teaspoon or a pastry cone.

  9. Let the chocolate dry well before enjoying the cookies.
