
Chicken Gyros in Air Fryer

Ingredients
- 1 tbsp. coriander seeds
- 1 clove garlic
- Zest of 1 lemon
- 1 tbsp. smoked paprika
- 1 tbsp. dried thyme
- 50 ml olive oil
- 3 tbsp. lemon juice
- 600 gr. boneless, skinless chicken thighs
- 1 large onion
- Skewers
- 1 tbsp. Maille original mustard
- Salt
- Pepper
For Serving:
- Tzatziki
- Pita Bread
- 1 onion
- 1 tomato
- 1 tbsp. parsley
- olive oil
Method
- In a mortar and pestle, combine coriander seeds, garlic, lemon zest, smoked paprika, thyme, salt, and pepper. Grind well. Add olive oil and 1 tablespoon lemon juice. Mix well until combined.
- Place the chicken in a bowl and add the marinade. Mix well to coat all sides. Cover and marinate in the refrigerator for at least 15 minutes (ideally 3 hours).
- Thread 3 skewers with pieces of chicken, alternating with pieces of onion.
- Place the skewers diagonally in the air fryer basket and cook at 180°C for 25-30 minutes, flipping halfway through.
- While the gyros are cooking, brush the skewers with mustard on all sides with a brush.
- Serve the gyros hot with tzatziki, pita bread, sliced onion, tomato, parsley, and a drizzle of olive oil.
