Chicken Gyros in Air Fryer

Ingredients

  • 1 tbsp. coriander seeds
  • 1 clove garlic
  • Zest of 1 lemon
  • 1 tbsp. smoked paprika
  • 1 tbsp. dried thyme
  • 50 ml olive oil
  • 3 tbsp. lemon juice
  • 600 gr. boneless, skinless chicken thighs
  • 1 large onion
  • Skewers
  • 1 tbsp. Maille original mustard
  • Salt
  • Pepper
For Serving:
  • Tzatziki
  • Pita Bread
  • 1 onion
  • 1 tomato
  • 1 tbsp. parsley
  • olive oil

Method

  1. In a mortar and pestle, combine coriander seeds, garlic, lemon zest, smoked paprika, thyme, salt, and pepper. Grind well. Add olive oil and 1 tablespoon lemon juice. Mix well until combined.
  2. Place the chicken in a bowl and add the marinade. Mix well to coat all sides. Cover and marinate in the refrigerator for at least 15 minutes (ideally 3 hours).
  3. Thread 3 skewers with pieces of chicken, alternating with pieces of onion.
  4. Place the skewers diagonally in the air fryer basket and cook at 180°C for 25-30 minutes, flipping halfway through.
  5. While the gyros are cooking, brush the skewers with mustard on all sides with a brush.
  6. Serve the gyros hot with tzatziki, pita bread, sliced onion, tomato, parsley, and a drizzle of olive oil.
