Feta Parcel with Honey, Thyme & Rose Petals

Ingredients

For the feta:
  • 200 g feta (cut into square pieces)
  • 2 sheets phyllo pastry
  • 2 tbsp melted butter (for brushing)
For the honey syrup:
  • 50 g honey
  • 50 g butter
  • 1 tsp toasted sesame seeds
  • 1 tsp thyme (fresh or dried)
  • 1 tsp rose petals (edible, dried)
  • zest of ½ orange

Preparation:

  1. Preheat the oven to 180°C.
  2. Cut the phyllo sheets in half and the feta into 4 pieces.
  3. Take each phyllo sheet, brush it with melted butter, and place the feta on the sheet. Fold it like a parcel, making sure it closes securely.
  4. Brush the outside with the melted butter and place the parcels on a baking tray lined with parchment paper. Bake for 20-25 minutes, until golden and crispy.
  5. In a small saucepan, heat the honey and butter until they melt and combine.
  6. Remove from heat and add the sesame seeds, thyme, rose petals, and orange zest.
  7. Once out of the oven, drizzle with the aromatic honey mixture.
