
Tacos with spicy roasted cauliflower

Ingredients
- ¼ cup olive oil
- 2 tbsp chili powder (adjust according to how spicy you want your meal)
- 1 tbsp garlic powder
- 1 tsp paprika
- 1 tbsp oregano
- 1 tsp cumin
- 1 large cauliflower cut into small florets
- ½ cup sour cream. For a vegan dish: vegan cream cheese
- 3 tbsp lime juice
- 1 cup red cabbage, chopped
- 1 cup chopped cabbage
- ¼ cup red onion, finely chopped
- ¼ cup fresh coriander, chopped
- 8 small corn tortillas
- Lime slices for serving
Cooking Method
1. In a large bowl, mix the oil, chili powder, garlic, paprika, oregano and cumin. Add the cauliflower and cover it well with the mixture.
2. Place the cauliflower in a large pan with non-stick paper and bake until golden brown for 25 to 30 minutes at 180 degrees.
3. In the meantime, in another bowl, mix the sour cream, 1 tbsp of the juice, and ½ tbsp of salt.
4. Once the cauliflower is ready, fill the wraps with the vegetables, the cauliflower (3-4 pieces in each wrap), and garnish with the sauce. Add the chopped coriander at the end and serve with lime slices
