Ingredients for 12 ‘’Pourekia’’

For dough

1kg village flour

250ml warm water

120ml oil

Drops of lemon juice

Pinch of salt

Fry oil

For stuffing

750gr fresh Anari cheese

50ml blossom water

200gr sugar

1tsp cinnamon powder


  1. For dough: in bowl add flour and salt. Mix well.
  2. Pour oil and mix until flour absorption the oil.
  3. Add lemon drops and then water slowly-slowly. Mix well for soft dough.
  4. Let the dough to rest for 30 minutes, covered with wet napkin.
  5. For stuffing: blend well all the ingredients.
  6. Lay down dough and add 1 tbs of mixture every Cover with dough and cut in your favour shape (round, square etc).
  7. Close well the edges with fork.
  8. Deep fry in hot oil.
  9. Served hot or cold. Drizzled with icing sugar and cinnamon.
