For 8 mini burgers

1 medium green zucchini

1 carrot

1 potato

1 egg

1 cup Kostakis Graviera, grated

5-6 mint puddles, chopped

2 tbs chives, chopped

1/2 cup breadcrumbs

flour for coating

oil for frying

Salt & Pepper

Grate zucchini, carrot, and potato from the large side of the grater. Drain well until all liquids are removed and place in a bowl. Add egg, graviera, mint, chives and mix well.

Season with salt and pepper and shape mixture into mini burgers.

Coat with flour and fry in plenty of oil at medium to high heat for 2-3 minutes on each side.
