1 cup oil

1 cup thin sliced potatoes

1 bunch chopped spring onion

½ cup goat cheese

¼ cup sundried tomatoes

5 beaten eggs

Salt and pepper


  1. In medium heat add oil and fry potatoes until tender.
  2. Remove oil. At the same pan add the rest ingredients except cheese.
  3. Leave to cook and tortilla get the pan shape.
  4. Served with the cheese.
