Ingredients for 4 portions

500gr noodles

50gr spring onion chopped

2 medium size mushrooms

1 medium size carrot

1 medium size zucchini

60gr broccoli florets

50gr beans sprouts

40gr pineapple

100ml pineapple juice

30ml sesame oil

10gr ginger

1 garlic clove

100ml soy sauce

50gr cashew nuts


Preparation

  1. Boiled noodles for 8-10 minutes and then strain.
  2. Slice all vegetables except pineapple cut in cubes.
  3. In very hot pan add oil and then add onion, garlic, ginger and vegetables to cook for 3 minutes.
  4. Add pineapple juice, soya sauce and bring to boil.
  5. Add noodles, cashew nuts and pine apple cubes.
  6. Reduce sauce in 1/3 and served.
