Prepare Use Bring the Gammon to boil and simmer for about one hour in water with whole black pepper, cinnamon, orange juice, wine, celery and onion. Leave to cool and then remove the net and carefully cut away the rind. Score the surface into diamonds and stud their corners with cloves, frost it with honey or sugar and vinegar and bake in a medium oven (150°C) for about 20 minutes. Serve whole or cut into slices, garnish with thin orange or pineapple or cooked quince slices
