Caprese sandwich with balsamic glaze

Ingredients
- 2 slices sourdough bread
- 1 ball of fresh mozzarella cut into slices
- Thinly sliced tomato
- Arugula leaves
- Fresh basil leaves
- 1 tbsp pesto sauce
For the glaze:
- 1/4 fl balsamic vinegar
- 1 tbsp honey
Method:
1.In a small saucepan, boil the balsamic vinegar and honey over very low heat and stir until it reduces by half. Take care not to let it boil and remove from heat.
2. Prepare the sandwich: spread the pesto on both slices of bread and then the rest of the ingredients. Season with salt and pepper.
3. Garnish with the glaze and bake in a toaster until the bread is golden brown.
